Beer battered fish or shrimp

Crunchy and delicious.


What you’ll need:

Oil for frying
1 lb fish fillet or 1 lb shrimp, peeled and deveined
3 - 4 Tbl biscuit mix
1 c biscuit mix
½ c beer
1 egg
½ tsp salt

Pour oil 1 ½ inches deep in a heavy saucepan or deep fryer. Heat. Lightly coat fish with the 3 - 4 Tbl biscuit mix. In a large bowl, mix remaining ingredients until smooth. If batter is too thick, stir in additional beer, 1 Tbl at a time, until desired consistency. Dip fish or shrimp into batter, letting excess drip into bowl. Fry fish about 2 minutes on each side or until golden brown. Drain on paper towel lined plate. Serve hot with tartar sauce if desired.
