My grandmother always made this and it’s the only way I’ll eat zucchini!
What you’ll need:
3 c flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp cinnamon
3 eggs
1 c oil
2 ¼ c sugar
3 tsp vanilla
2 c grated zucchini
1 c chopped walnuts
Grease and flour two 8 x 4 inch loaf pans. Preheat oven to 325 degrees. Mix together flour, salt, baking powder, baking soda and cinnamon. Set aside. Cream eggs, oil, vanilla and sugar. Gradually blend the two mixtures together, beating well. Stir in the zucchini and nuts and pour into pans. Bake for 40 - 60 minutes or until a toothpick inserted in center comes out clean. Cool for at least 20 minutes before removing from pan. Makes 2 loaves.
